Sprouted Green gram Stir fry

In Kerala, we use green grams in various forms, like in curry, stir fried or as thoran (adding coconut) and the sprouted ones I like to have it in the form of salad. This time I made a stir fry by adding garlic, which will be a treat to your taste buds.


This is a very healthy and a nutritious dish, which should be tried by all, especially because it is a perfect nutrition pack for kids.


Ingredients:
  1. Green Gram (sprouts)- 1 Cup
  2. Turmeric Powder- ½ tsp
  3. Garlic- 5-6 Pods
  4. Red Chillies- 4 nos
  5. Shallots- 7-8 nos
  6. Oil- 1 tbsp
  7. Mustard Seeds- 1tsp
  8. Curry Leaves- few
  9. Salt- as per taste
Method:

  1. Cook the green grams along with salt and turmeric powder in a pressure cooker till 2 whistles.
  2. Grind garlic, red chillies and shallots coarsely.
  3. Heat a kadai with oil and splutter mustard seeds and curry leaves.
  4. Add the ground mixture and stir till the raw smell disappears.Mix in the cooked green gram well. Serve with hot steaming rice.

Nutty, Chewy White Chocolate Brownies

Happy Valentines Day to all my dear friends !!!


When I was thinking of making something using chocolate, I realised that its been long since I made brownies and I never ever tried any different varieties of brownies. So I decided to make these white chocolate brownies which are not only easy to make, but yummy as well.


I am sure this would be a perfect valentines dish to your loved ones.


Ingredients:
  1. White Chocolate- 110 gms
  2. Butter- ⅓ Cup
  3. Sugar- 1 Cup
  4. Flour- 1 Cup
  5. Eggs- 2 nos
  6. Vanilla Essence- 1 tsp
  7. Baking Powder- 1 tsp
  8. Pistachios- ¼ Cup
Method:

  1. Pre heat the oven to 180 degrees C.
  2. Melt the white chocolate and butter in a double boiler. When the chocolate starts melting remove from boiler and mix well.
  3. In this add the beaten eggs till it forms creamy texture. Add the sugar and vanilla essence. Mix well till all the ingredients all are well blended.
  4. Mix the flour and baking powder. Fold this to the above batter little by little and at last add nuts.
  5. Pour this mixture into a greased pan and bake for about 20- 30 minutes.
  6. Cut them into squares and enjoy an amazing bite.

Crispy Chicken Nuggets

When ever I go to KFC or McDonald, my favorite snack other than french fries are these chicken nuggets. I love these small, cute, crispy chicken snacks which we can pop easily one after the other and which will be finished within minutes.



This is my version of the lip-smacking chicken nuggets. One evening I was in a mood to eat some hot and spicy snack and I thought of this, and as my kid is a big fan of chicken, I knew that she will love this. With minimal ingredients, it turned out to be an amazing snack. You can make these in batches and freeze them. Whenever needed, just take it out and deep fry them. If you like to, then while marinating, you can add buttermilk and then squeeze and coat them in corn flakes or bread crumbs.
After making this at home once, now on I will prepare this at home rather than eat it outside.



Homemade chicken nuggets are much healthier and tastier than what we get from fast food joints. Here is the recipe on how to prepare chicken nuggets, hope you all will enjoy this…


Ingredients:
  1. Boneless Chicken- 250 gms
  2. Red Chilli Powder- 1 tsp
  3. Salt- as per taste
  4. Ginger and garlic Paste- 1 tbsp
  5. Lemon Juice- 1 tbsp
  6. Dried Oregano- ½ tbsp (optional)
  7. Coriander Leaves- 2 tbsp
For Coating:
  • Egg- 1 no
  • Crushed Corn Flakes- 1 Cup
  • Pepper Powder- 1 tbsp
Method:

  1. Cut the boneless chicken to small pieces.
  2. In a bowl mix the chicken along with red chilli powder, salt, ginger and garlic paste, lemon juice, dried oregano and at last coriander leaves.
  3. Mix well and keep this aside.
  4. Meanwhile beat the egg in a shallow bowl. In another bowl crush the cornflakes and mix with salt and pepper.
  5. Take the marinated chicken pieces and dip them in egg and then coat them in cornflakes and arrange them in a plate.
  6. Heat oil for deep frying and fry these nuggets till it turns golden brown on both the sides.
  7. Serve hot with tomato sauce.

Watermelon Milk shake

Nowadays I am addicted to this amazing fruit. I can have it any time of the day, in any form and in any season. I remember as a kid, always when in season, my dad used to buy this and cut into big slices. We used to enjoy this during hot summer weather.


Watermelon and milk is a perfect combination. I used to make a variety of juices and desserts out of watermelon like the watermelon mint coolers, watermelon and pomegranate mocktail, watermelon sorbet, watermelon popsicles and so on… Just that with sorbet and popsicles, I didn’t get a chance to take photos as they would finish off fast :-)


In this milk shake, I have added watermelon with seeds. Nothing special.. just the laziness to de-seed..:-)  I blended everything together and strained at last. The milkshake came out clean. This is simple delicious and super easy to make. Just try it out….

Ingredients:
  1. Watermelon (cubed)- 2 Cups
  2. Sugar- 2 tbsps
  3. Cooled Milk- 1 Cup
  4. Vanilla Extract- ½ tsp (optional)
Method:

  1. Blend all the ingredients in a hand mixer till smooth. When it is done sieve through a strainer and enjoy an amazing drink.
