Chilli Chicken and a short trip to Kerala


Sorry my dear friends, last month I was out of town and was enjoying vacations in my home town in Kerala. I couldn’t inform any of you, but thanks for all your love and support. I missed all of you a lot and mostly my little space.

It was actually a short trip but enjoyed a lot with my parents and in-laws, ate to my heart’s consent whatever I like, a 2 day trip to Munnar, in between my cutie pie’s b’day, roamed here and there in Cochin and last but not the least did lots and lots of shopping. And yes, I did collect a few recipes too.. Sigh.. and I am back to my daily routine..:-)

Today’s recipe is one of my favorites and I think most you like this from a Chinese menu. I make this usually when I have less quantity of chicken.



Ingredients:
  1. Boneless Chicken pieces- 250gms
  2. Onions- 2nos
  3. Green chillies (chopped)- 3nos
  4. All purpose flour / Maida- 1tbsp
  5. Corn flour- 2tbsp
  6. Pepper powder- ½ tsp
  7. Egg- 1no
  8. Salt- to taste
  9. Soya sauce- 2tbsp
  10. Garlic (chopped)- 9-10 cloves
  11. Red chilli sauce- 2tbsp
  12. Tomato sauce- 2tbsp
  13. Chicken stock cube- 1cup
  14. Vinegar- 2tbsp
  15. Oil- 1tbsp + deep frying

Method:
  1. Mix Maida, little corn flour, pepper powder, soya sauce, salt and egg in a bowl.
  2. Add the chicken pieces to this marinade.
  3. Heat oil for deep frying and fry the chicken pieces till golden brown. Drain and set aside.
  4. Heat a pan with 1tbsp of oil, add garlic and saute for a minute. Add green chillies and onions and stir well.
  5. Add the soya sauce, red chilli sauce and tomato sauce. Mix well.
  6. In this add a little chicken stock and bring the mixture to a boil.
  7. Mix the remaining corn flour with the stock and keep it aside.
  8. Add the fried chicken pieces and saute well. In this add the corn flour mixture and salt and mix well.
  9. Add vinegar and stir. Chilli chicken is ready to serve.
  10. If more gravy is required we can add little more stock and let it boil.
