Healthy Overnight Oats for Breakfast



Recently I started liking these overnight oats for breakfast. I love to experiment by adding different toppings like chopped berries, crushed nuts, nut butter, coconut flakes, a variety of fruits and so on. These will make you full till lunch and is easy to customize the flavors.


I feel these easy make-ahead breakfasts are essential for busy mornings. Overnight oats are rolled oats/ old fashioned oats, which are soaked in a liquid overnight. By the next morning, the liquid is well absorbed by the oats and can be had along with a choice of toppings. Sometimes I will just have along with chopped bananas. A perfect no-cook breakfast which is loaded with nutrients, fiber, vitamins, proteins, and will be liked by kids.


You can add any sweetener like the honey, brown sugar, dates syrup, chocolate chips for the kids. A healthy option to take to school/ office. By mixing all the ingredients the night before, a creamy, hearty, healthy, satisfying and absolutely delicious dish will be ready the next day morning.
I like the soaked raw oats rather than the gummy texture of the cooked oats. If you give these a try, please let me know.
Ingredients:

  1. Oats- 1 Cups
  2. Almond Milk- 1/2 Cup
  3. Greek Yogurt/ Plain Yogurt- 2 tbsp
  4. Cinnamon Powder- 1/4 Tsp
  5. Honey- 1/2 tbsp
  6. Chia Seeds- 1 tsp
  7. Peanut Butter- 1 tbsp

Method:

  1. In a bowl/ glass jar, add the oats, along with almond milk, yogurt, Chia seeds, cinnamon powder, honey, and peanut butter. Mix well till everything gets incorporated well. Refrigerate overnight.
  2. In the morning, add your choice of chopped nuts, berries, and granola. Enjoy a healthy and delicious breakfast.

Caramel Apple Cake- A simple cake for special occasion....


Caramel apples are fall's greatest pleasures. I always thought of trying them, but thinking about the calories never dared to taste them. As today is our wedding anniversary, like every year, this year too, I thought of baking a cake. I always have a batch of homemade caramel in the refrigerator. My daughter drizzles them on ice creams, or on toast and so on. I wanted to make a cake using caramel and so this caramel apple cake clicked in my mind.


This is a super soft, moist, delicious cake which will be finished within no time. The addition of apple sauce, caramel sauce gives a light and fluffy texture.

Every year for our anniversary, I will be baking different varieties of cake with varieties of frosting. This year I wanted a simple cake without any frostings. I decorated the cake with powdered sugar and drizzled with caramel.


I got the recipe for the cake from the blog "Sugarhero", which has got some amazing dessert recipes. I modified the quantity accordingly and baked a soft, moist cake which we all enjoyed and shared with our friends.



This cake looks tedious but can be done within less time. This will be a perfect cake for birthdays or any other occasions. You can decorate this cake with your choice of frosting. In anyways, this cake will taste delicious. Try this out and let me know how it turned out.

Ingredients:

  1. All Purpose Flour- 2 Cups
  2. Baking Soda- 1/2 tsp
  3. Baking Powder- 1 1/2 tsp
  4. Cinnamon powder- 1 tsp
  5. Salt- a pinch 
  6. Sugar- 1 Cup
  7. Apple Sauce- 1/2 Cup
  8. Caramel Sauce- 1/2 Cup
  9. Eggs- 2 nos
  10. Vanilla Essence- 1 tsp
  11. Buttermilk- 1 Cup
  12. Apple- 1 no (Peeled, cored and finely diced)

Method:

  1. Preheat the oven to 350 degrees F. Grease a baking pan with oil and dust with flour. Keep this aside.
  2. Beat the sugar along with eggs, till light and fluffy, add the applesauce, caramel sauce, vanilla essence, and buttermilk. Beat well using a hand blender or a stand mixer.
  3. Sieve the all purpose flour, salt, cinnamon powder, baking soda, and baking powder. Add this slowly in the wet ingredients and fold using a spatula. Meanwhile, mix the diced apples with 1 tbsp of flour and add them to the above batter.  Pour this mixture in the greased pan.
  4. Bake for about 30-40 minutes or till a skewer inserted comes out clean.
  5. Sprinkle the top of the cake with powdered sugar and decorate using caramel sauce.

Zaffrani chicken/ Saffron Chicken


First of all my apologies for a long break. It's almost a month since my last post. For the Christmas vacations, we visited my native. Though I missed my little space, I was having fun with friends and family as we were going after a long 3 and a half years. After all the jet lagging and settling down, am back with a new post. Now on, I will be regular and will be updating my blog space often.


Today I am here with a new, rich, creamy and delicious Zaffrani Chicken. Zaffrani Chicken is a dish made with chicken, spices and with a tinge of saffron. The small amount of saffron leaves a beautiful flavor to the dish that lasts till the last bite.
I ate this delicious dish in Bangalore long back and till now, I cannot forget the flavors. When some friends were visiting us, I recollected about this dish and made it instantly, which is a super hit. I made different varieties of dishes using chicken but completely forgot about this finger-licking delicious dish. Though a small amount of saffron is added to the dish, the flavor is spread throughout.


A perfect dish in this cold weather and a party favorite, I hope everyone who is reading this post must try immediately. The zaffrani chicken is well blended with the yogurt and spices and flavored with saffron. This dish goes well with any of the Indian bread or pilafs. This dish is mildly spicy but more creamy, rich and undoubtedly a royal treatment to our palate.
Ingredients:

  1. Chicken- 1 pound
  2. Onions- 2 nos
  3. Ginger- Garlic Paste- 1 tbsp
  4. Yogurt- 1 cup
  5. Cashew Nuts- 7-8 nos
  6. Red Chilli Powder- 1 Tsp
  7. Turmeric Powder- 1/2 Tsp
  8. Coriander Powder- 1 Tsp
  9. Saffron- a pinch
  10. Milk- 1 tbsp
  11. Whole Garam Masala- 1/2 Tbsp
  12. Oil- 1 tbsp

Method:

  1. Heat oil in a pan, add the whole garam masala. Then saute the sliced onions till they turn translucent. Add the ginger- garlic paste. Stir till the raw smell disappears. Switch off the flame and let it cool. Grind to a fine paste and transfer into a pan on low flame.
  2. Soak the saffron in the warm milk for some time. Grind the cashews with little water to make a paste. Keep these aside.
  3. In the above onion mixture add the red chili powder, turmeric powder, coriander powder. Mix and saute on medium flame for a minute. Add the washed chicken pieces along with yogurt and salt. Mix well. In this add, the cashew paste soaked saffron milk, and stir. 
  4. Add little water cover and cook till the chicken pieces are well blended with the spices and becomes soft. Serve warm along with rotis or pilaf.
