Baked Potato and Quinoa cakes along with a Yogurt Dip



This past week, I was little busy with my daughter's birthday. It was a unicorn themed birthday. I will make a post about it some other time. Nowadays Ramadhan fasting is going on in full swing. At home, my mom makes delicious, mouthwatering appetizers for iftar. It would be a nice gathering of family members during iftar.



Here in the US, I will be trying to make daily different varieties of dishes during iftar time. One among them is this potato and quinoa cakes. I got the recipe from Healthy Living James, which has a collection of healthy and nutritious food, which I like to google always. The recipes on the blog are so simple and less time-consuming.


These potatoes and quinoa cakes are so easy to make. Boil the quinoa and potatoes, mix them along with the spices and bake them till done. A healthy and delicious snack will be ready within minutes.
Ingredients:

  1. Boiled Quinoa- 1/2 Cup
  2. Boiled Potatoes- 3 nos
  3. Onions(chopped)- 2 nos
  4. Garlic (minced)- 4nos
  5. Olive Oil- 3tbsp
  6. Paprika- 1tsp
  7. Red Chilli Flakes- 2tsp
  8. Lemon Juice- 1
  9. Cilantro- handful
  10. Salt- as required

Method:

  1. Add oil to a pan, saute the chopped onions and garlic till translucent. Add the paprika, chili flakes.
  2. Meanwhile mash the potatoes in a mixing bowl, add all the ingredients along with the above-made d onions- garlic mixture. Mix well, shape in the form of patties.
  3. Arrange them in a baking tray, spray some olive oil on top and bake for about 40 minutes. Flip in between. Enjoy the yogurt dip.




Yogurt Dip:

  1. Yogurt- 1 Cup
  2. Lemon Juice- 1/2 lime
  3. Chilli Flakes- 2 Tsp
  4. Cilantro- few
  5. Salt- as required

Method:

  • Mix everything and serve.

Quinoa & Egg Salad


A healthy and nutritious salad a day keeps the guilt away, that is what I believe. Most of the days I like to have salad and I will be searching for a different variety of salads. Till now I have made salads using grilled chicken, fish but never made an egg salad.


This simple and healthy salad is made out of very fewer ingredients. This salad consists of all of my favorite ingredients which are boiled and mixed together.


These salads are filling, low- cal and a great way to satisfy your daily requirements. We can have this salad any time of the day. The nutty quinoa goes very well with soft eggs. I hope you all would like this.
Ingredients:
  1. Eggs- 3-4 nos
  2. Quinoa- ¼ Cup
  3. Broccoli- 1 Cup
  4. Spinach- ½ Cup
  5. Capsicum- ½ no
  6. Olives- 6- 7 nos (optional)
  7. Salt- as required
  8. Pepper- 1 Tsp
  9. Avocados- 1 no
  10. Boiled Corn- ½ Cup
Method:

  1. Boil the eggs till done. Remove the shell and 2 eggs cut in half and the remaining eggs remove the yolks and cut into quarters.
  2. Cook the quinoa till done. Boil the broccoli and capsicum by adding little water. Wash, drain and slice the spinach to pieces.
  3. In a bowl mix everything together slowly, add the sliced avocados and enjoy a healthy salad.

Quinoa & Oats Laddu- A healthy and nutritious snack...


These healthy and nutritious laddus are made out of quinoa and oats which turn out to be very appetizing and a delicious snack. If you think that quinoa is only good for salads and pilafs, then you should try this combination of quinoa along with oats.
Oats help to control the blood sugar and keep you feeling full and quinoa adds a little extra protein. The amazing combination of both will make your day.



In this laddus all the dry ingredients are roasted, then mixed along with jaggery, ground and rolled in the form of laddus using clarified butter. The addition of nuts will improve its taste to another level. Nuts are a good source of vitamins, fibers, and essential minerals. Flax seeds are called as the most powerful plant foods on the planet. These contain high levels of omega-3 fatty acid. Chia seeds are a common substitute in vegan cooking. These chia seeds also contain rich omega-3 fatty acids. All together this snack is a  full power packed one which can be had after a nice workout.


This laddoo was introduced to me by my dear friend. As she gave me these laddus, I fell in love with them and asked her for the recipe. I got the recipe and here it is today in my blog space. Very healthy and deliciousness filled laddus, which will be liked by all. Hope you all will try this out and let me know.
Ingredients:
  1. Oats- 2 Cups
  2. Quinoa- 2 Cups
  3. Peanuts- ½ Cup
  4. Cashew- ¼ Cup
  5. Almonds- ¼ Cup
  6. Pecans- ¼ Cup
  7. Chia Seeds- 2 tbsp
  8. Flax Seeds- 2 tbsp
  9. Jaggery- ¾ Cup
  10. Ghee/ Clarified Butter- ½ Cup
Method:

  1. Roast all the ingredients on a low flame, one by one. Keep these aside.
  2. Grind to a fine powder once cooled along with jaggery powder.
  3. Mix the powder along with ghee and roll them round in the shape of laddus and enjoy.

Quinoa Adai Dosa/ Quinoa and Lentil Crepes


Quinoa is a seed, not a grain. Nutritionally this seed is healthy, complete protein-packed seed, which has a good source of fiber, iron rich in phosphorous, magnesium and zinc. Quinoa is gluten free. It contains more protein than brown rice, potatoes or barley.
Quinoa is very quick and easy to prepare. This is cooked the same way as rice and can be used in wide range of dishes.


Adai dosa is an authentic south Indian breakfast. Adai consists of lentils and rice. This is a very healthy and nutritious too. The perfect combination with this dosa is said to be avial or jaggery. I first ate this when I visited a friend’s place and liked it so much that the next day itself I tried at home and from then on this adai dosa has taken place in our breakfast list. This time I  tried adding quinoa, which is very nourishing, wholesome and delicious.


Try this fiber-rich quinoa adai dosa and let me know...

Ingredients:
  1. Quinoa- ½ Cup
  2. Toor dal- ¼ Cup
  3. Green Gram Dal- ¼ Cup
  4. Chana Dal- ¼ Cup
  5. Urad Dal- ¼ Cup
  6. Moong dal- ¼ Cup
  7. Dried Red Chillies- 6- 7 nos
  8. Cumin Seeds- 1 tsp
  9. Hing- a pinch
  10. Salt- as required
  11. Green Chillies- 3 nos
Method;

  1. Wash and soak the quinoa, too dal, chana dal, urad dal, moong dal, green gram dal for about 3- 5 hours.
  2. Grind it coarsely along with green chilies, high, red chilies, cumin seeds with the required amount of water. The batter should resemble that of dosa batter.
  3. Add required amount of salt. Heat a Tawa, when it is hot, spread a ladle full of batter in a circular motion. Drizzle a tsp of oil on the adai dosa, cook on a low flame till done. Flip to the other side and enjoy a delicious and nutritious dosa along with coconut chutney.
