Tres Leches Layered Cake- An easy cake for any occasion



Tres Leches cake is a Mexican cake which is super moist, delicious and melts in mouth kind. I have seen in almost all the blogs, that this tres leches is a single sheet cake which is soaked in 3 types of milk and topped with whipped cream. I had my doubts regarding making this into a birthday cake as by soaking the cake in the milk mixture will make it pretty heavy and dense. All my doubts got cleared by the outcome of the cake.


I made the sponge cake, layered, soaked with tres leches, filled with frosting over which the sliced strawberries were spread, topped with another half of the soaked cake and covered with whipped cream frosting. At last, I decorated the cake with chocolate covered strawberries. Everything was done within no time. This cake seemed very easy and will take very less time to prepare. It worked out beautifully and would make an excellent cake for any occasion. Kids will enjoy this a lot.


I baked this cake for the first time. Many of my friends have described me about the richness and deliciousness of the scrumptious cake but I never got a chance to taste this before. This time for my husband's birthday I planned to bake this and it came out perfectly.


While whipping the cream, freeze the mixing bowl and the whisk attachments. Instead of whipped cream frosting, you can also use cool whip which is used in no-bake desserts. Try this cake and let me know.
Ingredients:
For the Cake Batter:
  1. All-Purpose Cake- 1 1/2 Cups
  2. Baking Powder- 1 tbsp
  3. Eggs- 4 nos
  4. Milk- 1/2 Cup
  5. Sugar- 1 cup
  6. Vanilla Essence- 2 tsp

Method:
  1. Separate the egg whites and yolks in a dry glass bowl.
  2. Beat the egg whites till stiff peaks form and keep this aside.
  3. In a glass bowl add sugar along with the yolks and beat till well blended. Add the vanilla essence.
  4. Drop the milk little by little alternating with the flour and baking powder till it gets finished.
  5. In the above batter, gently fold the egg whites until just combined and pour this into the greased baking pan, bake for about 20 minutes. Let it completely cool.

For the milk syrup:
  1. Condensed Milk- 1/2 Cup
  2. Evaporated Milk- 1/2 Cup
  3. Whole Milk- 1/4 Cup

Method:

  • Mix together all the ingredients and keep this aside.

For the Whipped Cream Frosting:

  1. Whipping Cream- 2 Cups
  2. Sugar- 3/4 cup

Method:

  • Beat the cold whipping cream along with sugar on high speed until thick. Refrigerate until ready to use.

Assembling the cake:

  • Sliced Strawberries

Method

  1. Cut the cooled cake in half. Place one half on a cake platter, poke the whole cake with a fork, going all the way to the edges and poke through the depth of the cake. Pour half of the milk mixture on the cake till it absorbs completely.
  2. Spread 2- 4 tbsp of whipped frosting on the cake, arrange the sliced strawberries over the top of the frosting.
  3. Before placing the other cake half, poke the whole cake with the fork and place the poked cake on top of the sliced strawberries.
  4. our the remaining milk mixture on top of the cake and let the cake sit for some time, till it absorbs all the liquid.
  5. Frost the top and sides of the cake using a spatula and smooth out. Decorate with sliced strawberries as desired, enjoy.

Eggless Honey Cake



This eggless honey cake I have seen in many blogs and wanted to try the unique taste of honey which in cakes is new to me. I have never tasted a honey cake before, but this cake is most popular in almost all the bakeries across India.
Basically, it is a vanilla sponge cake, soaked in honey syrup which is spread with mixed jam with a sprinkle of desiccated coconut. This cake is so moist, juicy, soft and cool. The cake absorbs all the honey syrup and gets soaked well. Though this cake has condensed milk and honey, we won’t feel the cake to be sweeter. It is just perfect.



Today for my husband’s birthday I baked this honey cake and as he is not a big coconut lover, instead of desiccated coconut I sprinkled slivered almond, which also tasted yumm. This cake turned out perfectly delicious and so they got finished as soon as the cake is cut.


Usually, this cake gets the red color because of the mixed jam, but for my cake, as I didn’t have the jam at home, I prepared the strawberry jam instantly and when it is cooled, I spread it on top of the cake. So everything is freshly made and I am sure that this will be a show stopper in any parties or birthdays. Just serve them cut into squares and this cake will be enjoyed by all and kids will love this as the cake is soaked in honey and spread with jam which is sprinkled with almonds or coconut. Try this out and let me now.


Ingredients:
For Syrup
  1. Water- ½ Cup
  2. Sugar- 2 tbsp
  3. Honey- ¼ Cup
For topping:
  1. Slivered Almonds- As needed
Method:

  1. Prepare the eggless vanilla cake. When the cake is cooled down, prick the whole cake using a toothpick.
  2. Prepare the sugar syrup by boiling the water along with sugar. When the sugar dissolves, mix and switch off the flame.
  3. When it is slightly warm add the honey and mix till it dissolves. Pour this all over the pricked cake.
  4. Over this cake, spread the jam using a spoon and cover it fully. Sprinkle the slivered almonds on top of the cake and cut into required pieces and enjoy.

Sabudana Kheer/ Sago Kheer/ Tapioca Pearl pudding

Eid Mubarak To all


Bakrid called as Id-Ul-Azha is one of the important festivals celebrated by the muslim community all over the world. Festivals are the time where we cook and share delicious food with family and friends.
After the morning eid prayers, the preparations of appetizing meal starts which is from main course to dessert.



Always for eid in my house, it would be a biryani (as my husband and daughter are huge biryani fans) and some kind of dessert. This time for dessert, I thought of preparing something different and ended up with an easy, simple but a luscious dessert, which can be prepared and served within no time. I prepared this, when my biryani was getting cooked. That means, it is very less time consuming dish to prepare.



This is a creamy smooth kheer which naturally thickens when cooled. This is very easy to digest and will be finished within no time as this tastes heavenly.
Just try this out….
Ingredients:
  1. Sabudana/ Tapioca Pearls- ½ Cup
  2. Milk- 1 Cup
  3. Water- ½ Cup
  4. Milkmaid- ½ Cup
  5. Cardamom Powder- 1 tsp
  6. Cashews and almonds- few
  7. Ghee/ Clarified Butter- 1 tbsp
Method:

  1. Wash and soak the tapioca pearls in water for about 15 - 20 minutes.
  2. Boil the soaked tapioca pearls in water, when they turn soft, add milk and milkmaid.
  3. Stir allowing it to thicken, add the cardamom powder.
  4. Fry cashews and almonds in ghee and when they turn golden brown, drain on a kitchen towel and chop to small pieces.
  5. Add these chopped nuts to the kheer and give it a stir, switch off. Enjoy the warm kheer.

Eggless Chocolate Cupcakes using Condensed Milk

I have always been baking cupcakes or cakes using egg, so this time I decided to bake an egg less version of chocolate cupcakes using condensed milk.The end product was quite cool and we got some perfectly baked cupcakes, which my little one, husband and his colleagues liked.


Whenever I feel like baking, I will be baking either cupcakes or cakes and so one day when I was thinking about ideas for my little one’s snack box, I decided to make these by adding chocolate chips and those tasted simply yumm. She finished off all of them within two days.




Since I had this condensed milk lying around, I thought of baking an egg less cake by adding milkmaid. These cupcakes are really soft and moist. There may be so many different varieties of recipes to make an egg less chocolate cake, this is one of them. Just try this out and let me know.


Ingredients:
  1. All Purpose Flour- 1 ½ Cups
  2. Cocoa Powder- ⅔ Cup
  3. Condensed Milk - 1 tin (400 ml)
  4. Baking Soda- 1 tsp
  5. Baking powder- 2 tsp
  6. Butter- ½ Cup
  7. Water- ¾ Cup
  8. White Chocolate Chips- ¾ Cup
Method:

  1. Preheat the oven to 180 degrees C and place the liners in cupcake molds.
  2. Sieve the flour, cocoa powder, salt, baking soda and baking powder thrice and keep this aside. In this add the chocolate chips and mix well with hand. so that the chips wont settle in the bottom of the cupcakes while baking.
  3. In a bowl mix the condensed milk, water and softened butter using a blender.
  4. Fold the flour mixture little by little into the wet ingredients till the flour gets over and it will look like a pouring consistency.
  5. Pour this in the prepared cupcake liners and bake for about 20- 25 minutes. Enjoy an amazingly delicious flavored cupcakes.
